Breakfast: Coffee, French Toast
Lunch: Pizza Twists
Dinner: Barbecue Beef Sandwich
Additional Description: French toast is a pretty easy breakfast, so to make it a little more interesting I made a quick blueberry syrup to go on top (fresh blueberries, sugar, water, a little lemon juice). We had leftovers again for lunch, one of the benefits of cooking a lot. For dinner we had the good ol’ crock pot going at home with a beef roast. Once we got home we trimmed it, shredded it with a fork and then applied the bbq sauce. While some buns were toasting in the oven, I chopped up some some cabbage and carrots to make a coleslaw (with mayo, sour cream, cider vinegar, salt, pepper and a little sugar). Some people might just keep the slaw as a side dish but I like to throw it right on top of the sandwich. Great flavor combination and texture and overall tasty dinner.
Day 5 is over and I’m fast approaching my first completed week on the cooking challenge. There are still several of types of food that I hope to make, and ingredients that I’d like to use. The toughest part of the challenge is knowing how much food to make. With my wife and I the primary eaters, I often have to either modify the recipes, buy small portions of food, or make meals that have similar ingredients.
Planning ahead is really the best way to make sure that you are cooking in the most efficient manner. This is an interesting fact I came upon the other day: Every minute in the US, people throw away about 120,673 lbs of edible food. Every minute! Also, every minute 18 people die of starvation (maybe caused by malnutrition?). Makes you think about how much we personally waste….yikes.
What can we do to be part of the solution and not part of the problem?

One of these days I’m going to invest in a dslr camera and a macro lens, then the pictures will be almost good enough to eat.
